Spending 8 days up-Island, 4 nights at Cluxewe, at the end of August. We'll be arriving at Cluxewe with a lot of fish (spending 3 nighs with Murphy's at Kyuquot prior to Cluxewe) and dont' just want to freeze it all. My brother and friend from England will be with me and, we'd all like to get some/most of our catch smoked/candied while we're at Cluxewe. Can anyone recommend someone in the Port McNeill area who can smoke and candy, then vaccum seal a quantity of fish in a short period of time for us?

Im not too sure what their times are like, but I can attest to the quality of Hardy Boys, in Port Hardy, some of the best smoked fish I've ever had.
